They let you take photos backstage, because all the designers love to show off their clothes on instagram and actually there is a "backstage" category of photos from fashion shows. Also, models are used to changing in a hurry between sessions and they are used to cameras being around.
Of course, it's assumed that you will take a photo only when they are properly dressed, so a long lens and some stealth is required ;)
