You do realize that it's not about protein in general, but covering a wide range of very specific essential proteins our body needs.
Eating meat of animals who already have covered that need until their death can yield a wide variety of these, if you want to go and collect them all for yourself that's possible, it's just that it requires a more regulated diet to still stay healthy.
Eating meat is the easiest way to assemble and maintain our body, as we don't have to eat half as many plants if we eat one or two kinds of meat. This is also one of the reasons our bodies adapted to send good feelings to our brains when we eat meat and bad when we eat broccolinis.
