Because you're probably trying to slowly move the brush or doing lots of tiny chicken scratch lines
You have to make quick sweeping motions for nice straight lines and just edit off the ends that over shoot (or Ctrl+Z and make a new line if it went astray)
Or just use vector lines and bend them to the shapes you want.
