Well, she IS an alicorn and they are valuable by virtue of their scarcity. It may simply be that the coloration/type of foals she usually produces aren't "in vogue" at the moment but the owner simply has too much invested in her to get rid of her. A fair number of stories have mlp-based fluffies as being worth quite a bit as compared to regular ones.

In some canon they know that spaghetti is the best even before they've ever seen or heard of it.
