It's difficult because I have a large phone. But I pull out my phone, make sure the screen brightness is all the way down, TURN OFF ALL SOUNDS, and then I look around to see if there's anyone watching me.
Then I open up the camera from the lock screen and hold it so the camera on the backside is facing the girl and just hold down the volume button to snap pics

I use my phone, I always have the flash turned off, same with the sound, and I made it so that I can press the volume key to take videos, then I take screenshots of the video. And to make sure nobody can see the screen of my phone, I bought a case that covers it.
Then I just casualy hold my phone in my hand, nobody suspects a thing because I always have my phone in hand, even when I don't creep on girls.
