I get it almost free because one of my room mates works at a health food store, and they're always having to throw away goods because they're past the sell by date, but not actually expired, so I just buy it off him for cheap.
It's pretty good stuff once prepared. It's flavorless and full of protien. You basically use it like you'd use egg. It's more to add some protien and calories to another food or be a carrier for spices than it is to be a dish on it's own.

I make fairy good money, ~65k, wife makes a little less. We have a house which is crazy expensive here (2200 a month), and I'm broke half the time. Life is expensive, but we live well, have fairly new reliable paid off cars, take vacations, eat out rarely etc. We keep 20k around for emergencies and contribute ~25k a year to retirement, but the money just doesn't seem to last. It's always something going wrong of popping up.
Maybe it's just different views. I consider myself frugal but not cheap. For example I get off brand sauces because its half the price. I buy cloths at walmart, I buy generic almost everything, do lots of my own car work, do all my own house repairs and yard work, brew my own beer and wine, almost never drink alcohol at restaurants, rarely go to movies, etc.
What I'm saying is everyone only gets one life. Why not spend enough money to enjoy it as much as you can?

Me and my mum (who is disabled, and I care for) eat very comfortably, one reason why so money gets spent on food is because we used to be dirt poor, I'm speaking glass of water and pasta and ketchup for dinner poor, while my mum left the room to "eat" aka smoke some cigs.
This was before she got ill, and things gradually got better in terms of quality of life, I have $400~ a month after my living expenses and the room I rent from her.
I've always been minimalist and careful with my money, I save most of my "disposable income" and my clothes last for years because I buy high quality, durable used for outdoors work stuff.

I make anywhere from 50k to 125k a year (the nature of my job means that my income is quite variable), my fiance made about 60k a year (recently promoted, but that doesn't matter for the purpose of this explanation).
Neither of us are really the type to spend lots of money, and I got about 10k inheretence when my grandpa kicked it, and since highschool I've been saving. So we take 100k, minus the 10k from papa, divided over four years. That averages $22.5k a year into savings, between two people, so that's $11.25k each of us, per year.
Round it up to 12.
