I just read a bunch of figure drawing tutorials and anatomy diagrams when I was a teenager. I used to draw a guide skeleton and then layer muscle on top of that, but I've been doing it for so long that I can do most of that in my head now.
I still use a guide layer, but it's extremely simplified.
