I'd like to think that if fluffies were being bio-engineered to be children's first pets/toys they would actually want to make them tough/resilient as kids can sometimes break their toys without meaning to or when throwing a hissy fit. Especially so, if, before the PETA break-in, Hasbio was planning on charging hundreds to thousands of dollars even for what would be considered "poorly colored" foals or adult fluffies. It would be a somewhat significant investment for parents buying a fluffy for their children and they wouldn't want it dying at the drop of a hat.
Now some of the fragility, I could understand it coming down to a poorly balanced diet or genetic defect but something like simply jumping down from a short height shouldn't mean an automatic leg snap.
