My favorite has been Emerald, but I'm replaying the entire series now, doing each region in order.
I've never played any game with Johto in it before, so that will actually be new to me.
Right now the only thing I need to do is finish the trainer tower, then beat the elite four a second time. Then I'll be done with FireRed, except for trying to catch them all.
If the thread ever gets really slow and dies tonight, I'll turn off my computer and play pokemon for the rest of the night after that.

Yeah, although if they don't do digital logic, hdl and FPGAs, I'd take courses on those. Mainly because the processing power of a FPGA is a lot higher than a MCU. Of course that comes at the cost of writing hardware vs software. But that way you can do complex algorithms in parallel with fixed timings.
Either way, just something for you to think about. FPGAs are a life saver in a lot of fields. Cisco uses Xilinx FPGAs in their high end equipment. Or they used to.
YMMV.

There's some about VHDL and there's a good bit about digital logic. The key thing is to learn digital logic before HDL. All HDL gets translated so if you don't know what you're writing it can be a real shit fest. Digital logic is fucking easy though.
