The problem most people have is they try to fight the wizard but that just lets them get more spells off.
Just fucking run up and tackle him and pin him to the ground and stuff a gag in his mouth. He won't be able to cast spells and is too weak to throw you off so you already won.

When I get in front of the wizard I'd raise the vizor on my plate helmet and sheath my sword start to say something while getting a bit closer and then suddenly slap my head downward closing the helm charge forward and shield bash him trying to knock him over with the momentum of my speed and weight from the plate, pull my sword out run him through the heart and try to pin him to the ground then grab the shield by the edges and beat him in the head with the shield till his skull cracks before he dies from the stabbing and then use the fireball scroll on whats left of the mush that use to be his head

I would put my Armor (standing up) outside the wizards house. I guess I use my ranger magic to sneak in to his lair undetected. He's sees me at the last second and shoots a fireball at me, but I'm too dexterous and I dodge out of the way, interposing my shield between the blast and myself avoiding all damage. Metal would conduct his fire spells so ideally I'd take leather armor and a bow.
I'd wager that since the demon is one-armed and blind he'd be fairly useless. The fireball spell is something the wizard would have and know how to defend against. I doubt a disguise would be of much use against a magic user who could most likely reveal me. The wolf would at least give some sort of distraction so that we could trade attacks and keep the wizard occupied.
Thanks isn't exactly a reward. It's an expected result and I think they'll thank me regardless. I have no use for signed Iron Maiden collectibles and it isn't even worth much. Hatching and training a dragon seems like a lot of work and selling it would probably attract unwanted attention of thieves. The value of the gold coins assuming they're an ounce each (which judging by the thickness and some of the faces they are), the estimated value would be over 1.28 million dollars. That is something I could use.

Right, so - since my leather armor is pretty shit and the wizard has some pretty powerful ranged attacks, I instruct my loyal wolf companion to grab one of the wizard's legs and pull him down, all the while attempting to keep him from standing back up. Before the wizard has a chance to stand again, I charge him, ready to bash his head in with my warhammer the second I get within range. Just before I'm able to kill him - on the backswing - the wizard hits me with one final fireball, but it isn't enough to save him. My warhammer smashes his sorry skull into a million pieces - bits of bone, flesh, and grey matter fly off in all directions. I retrieve a key from the wizard's body, and after patching up my wolf and myself, I discover that the key opens a small chest hidden under the wizard's study desk. Inside was a dragon egg.
