I'm a sucker for sappy or not sappy romance stuff. Slice of life really catches my attention too. Also, anime with long, interesting story arcs throughout are awesome. I ain't asking for anime that have all of those things in them, just asking what anime are there with those individual things, or any combination of those things.
Say what you want about the show, but theres no denying that AoT has some of the best animation out there. The detail is incredible, especially during close ups.

Controversial Opinion, but Bleach has always been a favourite of mine. Some of the Filler Arcs can be god awful (*cough* Bounto *cough* New Captain of 3rd Squad *cough*) but if you are just looking for an anime with some great fights and an alright story, its pretty good.

First: SAO has very many problems. The issue I had overall with the anime was that the second arc was bullshit but that is nothing new. The first arc had its good moments. The thing that made this anime so bad was that it had about 5-6 filler episodes in the first arc that was about 14 episodes long. Also the other problem was that every time it was needed the main characters didn't need to follow the rules of the world.
Second: AOT was actually not that bad but the biggest issue I had with this anime was that the main characters felt like they were unkillable. But this felt not because of specific good reasons in the fight but just "because plot". The early episodes I actually enjoyed because of the fealing they all can die at any moment and with this felt very realistic. But they made it easy with all these "lucky" situations.
A good anime doesn't has this feel of "because plot". But this doesn't only count for Anime but for all Stories told in books and cinema and shit.

The main problem with Re:Zero is that it does absolutely nothing with it's time travel premise. All the possibilities you listed would have been fun, but none of that's in the anime.

My personal favourite is by far Overlord, which is the absolutely PERFECT show if you DESPISE beta and wimpy main characters. This show will not let you down. Another honourable mention is The Tower of Druaga Aegis of Uruk & Sword of Uruk. The RPG atmosphere in these is truly something else.
