Getting into some lazana ani't even Monday.
#hungry
Cooked in a restaurant for almost 10 years. I can throw down
I cook now and then, nothing extravagant though.
The last thing I didn't just heat up were some portobello mushrooms for sandwiches. Had them on old Pillsbury biscuits.
>>708065174
yes, but it doesn't look like you can
>>708065174
I can, if I throw a shred of passion into my food it turns out bomb.
>friends all leave you or get busy with life
>nobody to cook for but myself
>don't see the point anymore
>cook for the fuck of it now
>palatable but utter shit compared to what I used to be able to do
Am I the only one?
>>708065174
what do you mean ?
can i follow simple instructions?
yes.
i dont get why some people cant
every fucking time my mom cooks she says oh i just guessed with x or didnt follow the recipe with x
and then has the nerve to say hmmm it didnt turn right i wonder why
>>708066515
does working in a restaurant apply to home cooking?
i know a guy worked in restaurants for years and still didnt know you arent supposed to use metal on teflon
Last years turkey in brine
>>708067682
It can. I usually misjudge oven times at home. I use that at most 3 times a week, use the ones at work all day ery day
>>708068639
whoahhh
how was it?
>>708069147
Like salty milk poured over coins
>>708069147

Master chef at McDonalds checking in
>>708065174
Yes, id say I'm pretty good at it
>>708071106
does the grill have a timer or what
Anyone who can't is a fucking idiot who never made it out of their parent's wing.
Seriously, today's cooking takes having an Internet connection and the ability to follow basic instructions. Considering how many women, parties, and friends you impress just by being able to prepare simple shit, it's a no-brainer to learn.
>>708065174
you have roaches in your food, dude.
>>708071238

Extra bacon and extra cheese pizza I made when I worked at Domino's

Trust me man it's good as fuck. It's a southern thing.
I can also make hard tack lmao
>>708070572
Nope I work in an upscale retirementioned community. Most nights I work the grill and I do soup and sauces in the morning. I've been learning saute station recently though

>>708072250
lmao fuck yeah hard tack
>>708072414
It's the garlic butter sauce they put on the crust. Takes a moment to soak in.

>>708072830
Aww shucks, thanks anon.
>>708072859
Nah I can just work the hell out of a flat top grill (or griddle). That breakfast came out too perfect I just had to take a picture.
Here's a bacon cheeseburger that came out pretty nice too. Whenever I worked in a restaurant product quality was a big pet peeve of mine.
>>708073072
it charges the butter
its a lighter flavor than direct application
I'm a pretty good cook. No professional training or anything, just lots of practice and experience. I can make a hatch chili pork stew that will make you do backflips down the street and punch your neighbor in the dick.
Fuck yes I can cook... 20 years restaurant experience, classical French culinary school, been featured in print and on TV.
>>708073072
Yeah I generally add fresh herbs to cooking fat no matter what, but with beef and pork it's transformative
>>708072715
Yet it was delicious. What did you eat tonight you little shit?
>>708072995
Last time I checked eggs are a pretty common breakfast food?
>>708073057
Chocolate gravy. CHOCOLATE. It's a desert dumbass. And it's oldschool southern tradition, something your high school ass wouldn't know
>>708073187
Nah I cooked them in the bacon greese so they got a bit dark from that. They were perfect.
This years Easter dinner. Brown sugar glazed ham and some sides. Money was tighter here so it's not glamorous or anything.
>>708073202
>Aww shucks, thanks anon
you are very welcome. you deserve it. A lot of people are so commercialized with their gifts and gestures.
Product Quality is a peeve of mine too. I am an absolute perfectionist in everything I do.
I hope you got some good sex for that valentines breakfast ;)
>>708073613
damn okay
>>708072958
Burnt butter sauce? Ok.
>>708073631

Salt is fucking salt man, Pink salt is salt. Fucking wank factor, gold leaf salt. Why. Why. Several.
>>708074372

There is a big world out there to experience once you leave your mom's basement.
>>708065174

>pic would say no
>>708074282
Did you manage to keep the burger moist? Turkey burgers tend to try out easily. If they stay juicy they can be surprisingly good.
I can't find any more of my food pics so have a dancing baby.
>>708065174
I am can cook most anything. Big fan of using grilled ingredients (i.e. homemade pizza with homemade yeast crust with fresh basil, fresh Roma tomatoes, mozzarella, with grilled onions, garlic and chicken and finished with a balsamic glaze drizzled on top).
>>708065427
Love to work the grill.
>>708074448
Different salts have different qualities.... Different dissolving properties... Different salinity... that's like saying all pepper is created equal, when clearly it's not.
>>708073603
How much do you make per year? Most chef pay at first is shit. After 20 years, what you doing now?
Fairly well, but I don't too often because I haven't figured out when I have time between working, sleeping, and relaxing so I don't snap.
I like Chinese food, and I can do a damn good Lo Mein...
>>708074714
yes, I sometimes put finely diced onions and pickles in the mix just for this reason
>>708074545
I'd rather not put dog shit in my mouth thank you.
>>708074714
Not that anon, but just saying you need dat medium heat to not dry it out.
>>708073603
Do you enjoy your job on a day to day basis? Is it worth it if you really have a passion for cooking
>>708073202
I tend to watch a random Kitchen Nightmares episode, when I'm hungry so when I cook I can pretend I am preparing a fancy meal, this is coming from someone whom does not have such a big food budget

Are you GORDON RAMSEY?
>Can you cook?
Yes. Home cooking.
People tell me I'm a "herbs wizard", but I actually just follow some simple rules.
Stuff I like to prepare include:
>egg dishes (omelette, frittata, tamagoyaki)
>dumplings (gnolini, uszka, pirogi)
>meat stews (coq au vîn, beef bourguignon, barreado)
>vegetable stews (chickpeas with pork, ratatouille)
>farofas (corn-based egg farofa, cassava-based bacon and banana farofa)
>potatoes (Venetian style, French fries, hashbrowns)
As well some random stuff like cacik, polenta, shukshuka, risotto and semi-random stews.
>>708075249
>Are you GORDON RAMSEY?
Doubt if Gordon would be on /b/ personally. The guy hates using a computer and has assistants for all his web and internet work.
I've made this chili a few times. It's fucking beast.
>>708075248
no the previous poster, but if you add some red pepper flakes, dash of white wine vinegar, ginger, minced garlic and a finely chopped onion, and honey with the almonds and cremini mushrooms and you will have a very tasty Asian green bean!
>>708075194
Looks good anon. Slow cookers are the shit, I always recommend them to everyone who says "I can't cook..."
Now, chop up that bay leaf and snort it, you'll be high as fug.

>>708075714
That's cool and all but... Will it blend?
>>708075756
your jew bread looks burnt anon
>>708075807
It is basic. It's perfect for someone with no experience and basic cooking knowledge to make something from scratch. And it's delicious.
Chef here
>>708075999
Confirmed as jew.
Fig, goat cheese, and shallot pizza.
Incredibly easy but totally delicious.
>>708074902
50k a year.... definitely not an industry to get into to make it rich... you do it because you are driven to do it.... the restaurant bug takes hold and nothing else will be an option.
>>708075049
Best of luck to you then anon.
>>708075106
The actual cooking and creativity part of it is great.... the office and administrative stuff, not so much. Costing portions, scheduling, orders and inventory is not glamorous or fun, but that's where you will make or break your restaurant. You will learn inside and out what your costs should be and what they really are. The actual cooking is a small part of the overall success for a restaurant.
>>708075807
Basic? yes.
But its fujcking FIRE
>>708076156
That... That's not pizza man... Please kill it with fire.
>>708072640
Damn anon, that looks fucking good. I've been craving Asian with noodles and veggies. What did you do for sauce?
Pic related is the recipe for the best French Dip you've could ever have. Follow it to the T and it'll be glorious. Use the 1/2 cub soy sauce

>>708075756
Found also a coq au vîn I prepared some years ago. [Don't mind the timestamp]
In a hindsight I should've probably chop the parsley in smaller pieces.
I don't mean to insult chefs' immense efforts or training, but at the end of the day a pretty good home cook can replicate the vast majority of techniques and flavors at serviceable quality.
Yes I can, but I hate it.
I'd rather not eat a day than to get myself to cook something.
It is such a pain in the ass, why people enjoy it is beyond me.
>>708077382
is that pork?

Recently I've been visiting this behavioural health institution. Seen this guy who looks like heseinberg. He has this guy to help him who is mexican. He gets on my case about everything to the extent he calls me Elliot Rodger 2.0 He was the reason why I was there for 3 months at a given time and maybe if you're wondering why somethings have been changing recently you can blame him.
>>708077541
Holy fucking shit dude. Know your meat.
Even I can see that's a sirlion steak from veal
>>708077382
God damn I hate you for partaking in such a glorious meal

Go to bed Mohammed
Uszka... I grew with this dish, but I could only find its recipe recently, since my grandma used to call it by weird names.
>>708077442
I agree. I think the main difference between "industrial" chefs and home cookers is reliability - a good chef should be able to prepare good food in a timely fashion, while home cookers often take ages to prepare certain dishes.
>>708077541
Nope dude... veal - stay out of the kitchen ;)
>>708077177
Checked. And thank you.
Recipe is this, in case you want to try it.

>>708075249
Their dressing game is strong and the textures and colors look inviting, but the fruit is not supremed and the plate hasn't been wiped judging from the stray nut and sauce in the back.
3/5, would eat but probably not a 3 michelin star meal.
Pic related. Another well above average but not perfect dish.
>>708077808
It turned out better than expected!
Appetizer was homemade tuna-mousse.
Granted, made too much! Needed to leave some to not get too full for main course :P
>>708076096

>>708065174
>>708077818
It has to do with prep
Clearly you've never worked in a legit kitchen restaurant. I was a server but came in early to help with prep to be a better cook at home, it's a fucking ordeal. It why (not McDonald's) restaurants stay open from 3-4pm even though there's no business. Motherfucking prep work

>>708077818
Very true, precision and speed are definitely the truest hallmarks of a professional.
That and innovation. If the profession didn't require so much other bullshit, so many more people would be doing crazy stuff and investing a little bit in experimentation.
Speaking of which, a "caprese salad" with spinach noodles and balsamic pearls
>>708075756
how much did the challa cost?
>>708077999
I prepare something similar, carne-de-onça. The tip is not pressing the meat over the bread, to leave some room for the seasonings to "fill in".
>>708078402
Nice, thanks for the info. I never worked with that, but something I've noticed is that the food always tastes the same. There isn't that small "taste variation" you'd get when cooking home, where you sometimes add a bit more marjoram or oregano or a bit less, you know?
Honestly it's not worth all of the time and effort and money to make a fancy turd.
>>708078672
very funny, fuckboy
>>708078336
lol didn't expect to see this
>>708078191
I know, bro. Good luck. It's a great tasting chili.
>>708078460
Fuuuck is that "chocolate lava" or whatever with the melted center? My restaurant used to make that. It was incredible. Wish I learned how to make it while I was there
Out of curiosity, what do you do for a living? Your dishes are articulate and fairly pricy. Most people I know that make bank don't cool like that
>>708078672
Ah, is this what people call it in English? Nice.
It was homemade. Just a pizza dough recipe I adapted, even the sweet one below it.
>>708077260
2 tbsp lite soy
1tsp dijon mustard (I use 1/2 tsp spicy and 1/2 yellow mustard)
1/4tsp ginger
1/2tsp sesame oil
Sometimes I'll add garlic, rice wine vinegar, or lemon juice for a variation.
i'll admit i started cooking octopus because it seemed "cool" but it's become one of my favorite proteins

>>708078854
so by your logic just kill yourself now since you'll just end up as rotting flesh 6 feet deep?
we eat,sleep and breed.
thats all we got so let make fancy turds man
Dearest cooks and chef's in this thread, how do I order a poached egg cooked the way I want?
I want it poached with all the white cooked. I want the yolk to be firm on the outside yet still a little runny on the inside.
I have been ordering them "poached medium" and they are too runny
I have ordered them "poached well" and they are runny or hockey pucks.
What do I tell my server to get eggs poached the way I want?
>>708079166
Hows the taste? Not too rubbery i hope, some restaurants get the octopus just right whereas some turn it into an inedible rubber
>>708075714

I'll try it out tomorrow! Also, what kind of noodles are those? Buckwheat?
Also, I've never used lite soy sauce but Ive looked up some recipes for sauces and most of them call for a mix of lite and regular. Is there a difference other than maybe less salt/taste?
I appreciate the response

Yesterday i had a man order a trout plate. He wanted it burnt(normally he orders burnt chicken every day he comes in.) he wanted all the juices out of it, (hard to do with a rainbow trout without it being almost a dust) with a spicy chocolate sauce( never even had it on our menu or chocolate with an entree ever), raw broccoli potatoes, and corn. but he wanted the veggies glazed in our maple sauce( raw) and torch the top so it crystallizes. I almost lost it

>>708082744
Food trucks blew the fuck up in the last couple years. Not that I'm complaining, it's a good experience now but Where the fuck did that come from??
>>708083094
they asked us to make something new. we had 4 food trucks, and i made this. we had to use what we had on the truck we were on, I was the only one to make a desert type item.
It never hit the menu, but staff and regulars asked it.
>>708065174

>>708075194

That frosting looks delicious!!
>>708082535
>>How do you want that cooked?
>>Man I'm black, you know I want that shit burnt
This is pretty said identifying race with how they want their food.
The origin of "black food" is it's mostly items cut away from prepping in a southern plantation kitchen and fed to the slaves. If a piece of meat was accidentally burned, it was fed to slaves. Here we are a century and a half later and those food habits have survived generations.
i hate food
>>708084979
A customer always wanted his toast burnt. I finally asked him why. He said that's how his mom made it. Probably drunk
>>708083062
Bullshit! Eggs doesn't droop like that!
>>708085730
Not sure if trolling or stupid, but yes, eggs do droop if you cook them just the right amount of time.

>>708083267
my ex would've done some shit like that
>>708085346
there food is heavly spiced because it was normally the food the spoiled being fed to them. throughout the islands they have passed down recipes and thats what happens. Just like how the irish still to this day use potatoes in almost everything because thats what all there great great grandparents knew and fed the generations so it became a "cooking style"
the culinary changes and growth is amazing to track and it helps learn what new trends will pop up before they do.
>>708078163

that is an amazing take on a beni. i love it. was it all seasonal vegetables at the time???
did you do it during the summer when they lay more eggs and have a heavier flavor? or did you do it doing the later season in july when they start to slow down birthing, but still have a none rusty flavor, like in the outta seasons eggs???
>>708087421
Gay much?
just a cook. When it comes to food and ingredients they have a peak that they taste the best. almost everything has a type of "season", even if its based of years at a time.

I can cook a little bit, enough to keep myself alive.
I make eggs that aren't that great, but they're food.
I make this Mexican food type thing with two tortillas and beans and cheese in it, a quesadilla. Most of the time it's not done the way I like it or somewhat burnt.
>>708076096
This looks really nice.
>>708075714

>>708079604
My thoughts exactly. Never understood the appeal of this, and you know it's fucking way over priced exotic shit that usually doesn't taste good.
