People tell me I'm a "herbs wizard", but I actually just follow some simple rules.

Stuff I like to prepare include:

>egg dishes (omelette, frittata, tamagoyaki)
>dumplings (gnolini, uszka, pirogi)
>meat stews (coq au vîn, beef bourguignon, barreado)
>vegetable stews (chickpeas with pork, ratatouille)
>farofas (corn-based egg farofa, cassava-based bacon and banana farofa)
>potatoes (Venetian style, French fries, hashbrowns)
As well some random stuff like cacik, polenta, shukshuka, risotto and semi-random stews.

The actual cooking and creativity part of it is great.... the office and administrative stuff, not so much. The origin of "black food" is it's mostly items cut away from prepping in a southern plantation kitchen and fed to the slaves. If a piece of meat was accidentally burned, it was fed to slaves. Here we are a century and a half later and those food habits have survived generations.

there food is heavly spiced because it was normally the food the spoiled being fed to them. throughout the islands they have passed down recipes and thats what happens. Just like how the irish still to this day use potatoes in almost everything because thats what all there great great grandparents knew and fed the generations so it became a "cooking style"

the culinary changes and growth is amazing to track and it helps learn what new trends will pop up before they do.
