Tbh I think all three were great games but Morrowind has my favorite world. Both in terms of the atmosphere and the lore. It also had the best character system. It's gotten more dumbed down in each game since, although Oblivion definitely less so than Skyrim. Funny to me that you say it was too easy. None of these is particularly hard but Morrowind I thought holds the player's hand less.

After my friends and I had to grind so we could take on the next story mission bandit camp after an hour in, I just gave up and went on to other things. I never felt like I was having fun.

Not OP, but I definitely have to say that Skyrim is not the height of Elder Scrolls. Oblivion was a bit autistic in its whole overall presentation, but the world was just more interesting than Skyrim. The music was more inspired (if that makes sense), I think the dungeons were also better made, and the world was just very bright and colorful and just kind of nice to explore. Skyrim, while having much better voice acting than Oblivion (which isn't hard), was just a little too ... I don't know. I never felt drawn into the world like I did when Oblivion first came out.
Also, one thing that really killed Skyrim for me was:
"We live in a world where magic exists, necromancy is real, there are Daedric lords who actually exist who live on the plains of Oblivion and you can summon demons from it. Also, trolls, goblins, undead and other untold monsters are constantly roaming around causing havoc for people."
