We don't actually see those planets though. We measure the light intensity of the star and record it. If it gets a little (we're talking about extremely small variations here) darker in regular intervalls you've found yourself something that's rotating the star. Depending on the changes of the composition of the light we can assume what the mass is made off and therefore calculate a mass and a approximated path of the planet.
