There are very few parasites that target deer that would be harmful to humans. Generally the bigger the land animal the less parasites infest them. Heart worms in a deer are obvious and can be avoided however eating heart worms...does not lead to heart worm infection in humans! who knew. The most dangerous thing a deer has that can harm a human (after the deer itself is dead) is ticks but they are in the skin and you don't eat the skin.
So no, there is no realistic risk in biting into a fresh deer heart other than it offends people that have never hunted or harvested their food.
