Dark Souls is a prime example of that. It's almost entirely singeplayer if that's what you want, but occasionally, you are invaded.
And that adds a huge part of the experience in my opinion because it shakes up the regular gameplay. The regular PvE fighting is great, but that tiny PvP opponent adds some extra spice.

As far as depth in creativity of crafting and options you can get more from Terraria and that goes on sale for 5 bucks. I understand it's not a flying sim and there aren't endless planets to go to (which is an amazing feat on their part, I'll give them that), but it's built on the same crafting principle.
