Though I've always had an affinity for the Defiant, I would definitely want something with a holodeck, cozier quarters, more breathing room, and some serious science capabilities. However, having something as big as a Galaxy-class starship would feel almost lonely to me and I'm too introverted to feel comfortable with the 1000 people or so needed to fill it up.
That all being said, I might go with an Intrepid-class starship—though I hate the flappy nacelles—or a Nova-class starship.
