The issue isn't that knives draw faster than guns, it's that attempting to draw out anything in response to an attacker that is already actively assaulting you with a weapon requires reaction time and additional actions to allow you to catch up to the level of readiness your assailant is already at.
It would not matter if you were using a gun, a knife, or a baton: you start at disadvantage and the best course of action for you is to attempt to regain control of the situation unarmed first and THEN if able or necessary draw your own weapon to achieve advantage.
Also a gun does not need to be fired in order to wound. They even train officers to use less-lethal tactics with guns in odd situations, such as pistol-whipping a fuckhead or just jamming the barrel of the gun straight forward into their face. It's a hunk of metal, and a functional billy-club. Attacking with a gun does not involve more time investment than attacking with a knife, and firing it involves only slightly more action on your part.
The difference is any jackass can put 6 rounds in center of mass at 30 feet, but if you want to kill or severely maim anyone at 30 feet with a knife you better be something pretty goddamn special.
The issue with the knife vs the gun at close range isn't the choice of weapon, and it isn't even the range. It's who goes first. Anyone who has a gun who tries to draw to react to an assault by an already drawn firearm is also at extreme disadvantage. It's reaction time.
