If you're new to modding I suggest just get familiar with Nova launcher and a few icon packs first.
Find some widgets, there's apps that allow you to create your own widgets like Zooper and whatnot. Or just find what others have created and see what you like.
After that and when you're confident that you won't fuck your phone up, rooting, xposed, find a custom ROM that supports Pro Layers. CyanogenMod ROMs have their own themes but it's more limited than using Pro Players. Now there are themes that can change your system settings and give brand new look to everything. A variety of colors and images can be found so long as you like to experiment. Mod to your taste, it can get fun.

There's no need to redo everything as you can always use Titanium backup to backup the settings and data of various apps, and for Nova you can also backup to a file then simply restore them on the new phone. I usually do this when flashing new ROMs (and indeed if this backup restore thing wasn't an option I would be much more reluctant to experiment with new things). The whole restoring process can take as short as 5min so once you get used to it it's a no brainier.
