I always find the best way to find the best of an artist (especially when their discog is huge) is to get an anon's input on it. More often than not I think people aren't seeking validation they're just seeking sharing. You should get Chopin's Op. 28. It's 24 Nocturnes for piano. One of every key. Beautiful and very inspirational for a jazz player. Shura Cherkassky I has done a good recording of it all.
Down the lines of Debussy you should get some Satie as well. His Gymnopedies and Gnossiennes are strikingly good, 3 of each and you'll recognise them.
Both the Chopin and Satie are solo piano pieces but augh amazing.

it's his best work by far. really deep atmospheres.
it's more focused and coherent than the music for films.
as for the classical, i like classical but only certain types and i don't know enough about it to know how to efficiently find what i'm looking for.
it can be hard to describe what i'm looking for in classical:
i generally don't want to be able to discern the time signature or tempo. i like more slow and evolving pieces. stuff that almost verges on the ambient. i love the ethereal and atmospheric
