I'm a waiter in Australia in a cafe, coffee is roughly $4-5 Aud, food ranges from about $12-20
$12 gets you basic bacon eggs on toast, 20 gets you a full breakfast with avocado, mushrooms etc etc.

It's not if you do it right. The server's base wage is below minimum, isually 4 an hour. And here the double egded sword begins:
If they don't get enough in tips to make it to at least min wahe, the server gets min wage, the subsequently fired for not performing to the manager's standards.
If they do make enougj tips, the tips get taced in a much higher bracket than normal wage, often times leaving they're take home less than if they'd just fucked up their job and got min wage by default.

Tipping is a strange custom in US and in Canada. I've been a waiter and bartender for years, although I'm not anymore. I've worked in crappy pubs and in fine dining, so I've seen it all.
If you're visiting Canada and the US, there's the concept you need to understand which has been laid out above ad nauseum. People in the service industry generally are paid shit, on the understanding that they'll make tips. Taxi drivers, barbers, doormen at clubs, and bellhops should be tipped if you believe that they have done a good job and are friendly and attentive, but it doesn't need to be a lot. It's a "thank you".
But we're talking about food service, which specifically has a lower minimum wage. So if you eat out and don't tip, you're screwing your server. Which is fine if they did a crap job, but if they did decent or very well then you should give them something.
How much? 15-20% of the after tax amount is excessive, I agree. I generally tip 10-15% of the pre-tax amount for average service, more if I like the person.
I agree that being a good server is a very stressful job, it's more than just running plates from the kitchen to a table. A good waiter will make your dining out much much better as an experience and they should get something because they sure as hell aren't being paid much per hour. But don't feel compelled to tip out 20% of the after tax amount just because it's expected or to be polite.
If being a good waiter was considered a profession worthy of a good wage, as it is across much of Europe, then tipping isn't expected at all. But the simple fact is that in Canada and in US many waiters are students or single mothers. So they wait on tables and live off the kindness of strangers. Yes, that sucks. But it is what it is.
Also in food service, tipping is generally expected when there's table service. If you don't want to tip, then go where you line up for a tray, pay, and bus yourself.

When I go out, I tip on the whole experience. If the food is disappointing but the service is great, I'm not going to screw the waiter over by not tipping at all, the waiter doesn't cook the food. Then I'll tip the waiter and if I feel strongly about it I'll speak to the manager about the food on the way out.
If the food is great and the service sucks, then I'll tip little or none, but on the way out give the manager a tip to give to the kitchen only.
When everything comes together it's a team effort. But in most places I've worked, there's an "us vs. them" mentality between the kitchen and floor staff. It's a shame. The system itself is partly to blame; if everyone was paid decently and tips were split (in some fashion) then the workplace would be much better. I'm a GM at a restaurant in Boston. When you go out to eat you're essentially being catered to. You don't have to buy food or drink, you're waited on hand and foot, whatever you'd like in terms of what the establishment can offer is at you beck and call. This is the ideal behind tipping. So running food from here or there is bullshit and you haven't experienced dining at its finest. It's the servers job to connect with you in a certain way to make an option available to you that you wouldn't have previously thought about... Just making your night out better. I'm not defending towards giving a tip... But the fact that you didn't make the food, drink, have to serve it to your party, all of the things that it takes to create, and the time spent doing these things warrant a gratuity based on your experience. The waitstaff and bar staff I manage work their ass off to meet a standard and stereotypes aside it is really frustrating to get a $2 tip on a $50 bill. They do make $3.35 an hour and live off of what they can do for you. With all of this being said if you don't want to tip because "you don't believe in the idea" then don't come to my establishment. The staff prep for guests much harder than you realize to make your day/night out something good. It's also pretty dispationate to say "get a real job hurr durr," because most of them are going to school or trying to become professionals in the industry. Also as a side note, when you hook your server or bartender up here in the states, you'll get mad food and drink for free... I allow it, I've seen it, experienced it, and have done it myself. Kitchen work is hard, I know. Putting together an attractive plate with items that take different amounts of time and effort by different people is a miracle of organization and attention to detail. But when the plate goes out, your job is done. The waiter's isn't. A lot more goes on than you realize.
