I hit Cargill Meats' factory outlet in Hereford once or twice a month and I can pick up McDonalds nuggets for £1/1.5kg, medium whole chickens for £1, other overstock or overrun contract portions for fire-sale prices. It's all cash you don't have to fork out, so do this rather than spending £4 on the same whole chicken in Morrison's. I usually get a few, keep a couple of whole ones and cut the rest into quarters for the freezer.

As a chef, I don't add sugar in the sauce to counteract much acidity, the vegetables do that perfectly well on their own. I use sugar or honey to add a level og depth to the sauce, which is really noticeable in side-by-side comparisons. Honey, I've found, perfectly counteracts the acidity in wine, though, as well as layering the sauce.

As not a chef, recipes are quite useful as a starting point. Find something online, make it once and figure out what you liked/didn't like about it. Then change it to make it better or move on to something else.
If you don't want to do recipes, then learn basic dish components. Learn to make a stock/broth, learn how to cook your meats well, learn how to prepare your vegetables in different ways. Then just start chucking shit together and working on different seasonings and ways of expanding the depth of flavour in your dishes.

As a chef, you didn't say a lot retarded stuff. A good tip, find a butcher and ask for some various bones from chicken/calf. They'll give it to you for free and you can make yourself the best stock in town with just a few veggies and some elbow grease. Also, chucking shit together is my go-to method of making new dishes. Chucking shit that goes well together is definitely the way to go.

If you boil up your chicken carcass or pork bones, get the meat off and raise a nice stock, chop up some leftover vegetables, season and adjust - there's a couple of pints of top quality soup right there. In some sauces/soups/etc acidity is key, but as for most tomato based sauces, there's no need for such an amount of acidity, not is it complimentary to the meat.
