We can fly as much as we want. Being that pilots are lazy in nature we choose to have automation do most of our work. Typically in terminal areas on climb out and arrival workload is very high and without automation it would be very difficult to handle the aircraft as well as prepare it for arrival. In cruise autopilot is definitely on. When I fly I usually don't turn the AP on until cruise but it's mostly pilots preference as to when it comes on and off.

What you means is you can't fly complex aircraft. A complex aircraft however has to have retractable landing gear, flaps, AND a controllable pitch propeller.
