The Antiquarian is fucking useless. She is all about her Camping Skills, which lets her make a trinket and gather supplies.
Parties are really flexible, but there are some solid rules.
Depending on what dungeon you are going into, you need to field certain characters.
For the ruins, Crusader and Plague Doctor are a must, Crusader because Smite does bonus damage to unholy, which is what the Ruins crawls with. And the PD because Skeletons and Gargoyles can't be bled, but they have shit Blight Resist. Healers can be changed here, but if you use the Occultist, bring a PD so she can heal the bleed his heal has, it's kind of rare, but his heal can make the healed person bleed.
The Weald, bring Bleed and people with marks, Bounty Hunter works best. Enemies in the weald are more likely to have PROT, so the BH's mark will reduce that. Hellion is good because she has nice base damage and bleeds. Again healers are needed, flexible except for the PD. You can always bring the Jester instead of the PD if you have a Vestal for a healer.
Cove fucking sucks, avoid this if you can. If you can't Blight and Marks are amazing, just like the weald. The PD is required here because Cove enemies have Bleed Resist and they can bleed you for 6-10 damage a turn if you aren't careful.
Warrens is the same as cove, less PROT, but they can give you diseases like a mother fucker.
Bosses are gimmicky, but can be coped with.
Ruins Bosses summon adds or spawn with them, constantly being pushed into the back row. Arbalest and Plague are perfect here, Crusader is good for killing the Necromancer's Skeleton Summons.
Weald bosses eat shit, The Hag hides behind a 90HP cooking pot that has 90% PROT. Bring damage that can hit the 3rd slot at all times. She also steals one of your heroes at all times, so bring 2 healers. The Cannon is easy, but you must kill the Pikeman, because he will fire the cannon and it will destroy you.

Part 2
The Warren Bosses are probably the easiest. The Swine King can hit 2 heroes at a time, but you can outheal it easily. Do not attack his marker Wilbert, or he goes ape shit and starts attacking for double damage.
The wall of Flesh is 4 parts that share the same health bar. It changes between 3 forms, 1 that heals, 1 that damages, 1 that protects.
No idea about the Cove or Darkest Dungeon, haven't done those.

Yeah, trust me, the first things you want to upgrade are your blacksmith and Guild, so you can get people who don't suck. Maybe upgrade your carriage so you can get pre-trained heroes. The stagecoach upgrade saves you alot of money, because you can get people who come at LvL 3 instead of 0, they come pre equipped with Blues and all of their skills come 1 level short of being maxed. This saves you an arm and a leg.
And I have done alot, I just reached the 2 year mark in my first campaign, only lost maybe, 10-11 quest.
You'll have it easier though, since they added the Heirloom conversion.
