My counter argument is that humans developed from a herbivore species into an onmivore one, maintaining some of the genetic aspects, one of which is artherosclerosis. If we truly were herbivores, we wouldnt have proper enzyme digestion of proteins(which we do) and we wouldnt need to eat meat to get some basic aminoacids that we can only get from meat diets

Ecologically, pasture land is valuable habitat for wildlife and native and naturalized plant species. Meanwhile, even organically grown crops take a huge amount of space, which then becomes nearly useless for all of wildlife and plants. A field of corn may as well be a desert for other plants, insects and the animals that eat them. Environmentally: Grass fed and pasture raised > a purely vegan diet.
