I am a regular at a few bars. I always leave $15-$20 for the bartenders. Know what happens when you do that? You get served first. You get taken care of better. You get preference over every other person on a crowded night. If you don't want to tip, go for it. No it's fucking not. I'm an American living in Europe for three years. I can easily say the service in American restaraunts is LEAGUES better than in Europe. This isn't even a debate. In europe, you are expected to wait and talk to each other. In the states, it's all business. Give me my drink. Get me my food. "Yes we are fine" now go away. In Europe, you wait fucking forever for them to come over, and god forbid a retard in your group isn't ready, because they punish you by making you wait just as long as you already did. Not to mention the attitudes. I work as a server in Massachusetts. My wage is $3/hr. Yep, $3/hr. It's not rare, it's not uncommon, and it's not the restaurant's fault-- that's a pretty standard wage for a server in MA.
So, here's the deal. If I work a 10 hour shift, and, somehow, get 0 tips, I have effectively earned $24 after taxes for 10 hours of work. If someone doesn't leave a tip on their bill, I don't make any money from the service I provide to them. Period.
I don't get a percentage of food sales, nor do I get an automatic gratuity for parties of less than 8. Make no mistake, more often than not, if you don't tip your server, then that server isn't making any money off of the entire service they just provided you.
Case and point: Server's wages are not high enough to live off of, at least in my case (and many others), so tipping is necessary. If your service sucks, that's one thing, but if you don't tip just because you don't care to, or you don't support the system, or what have you, you're ensuring that your waiter or waitress makes no money off of your meal and their efforts.

Look at it this way... If you are at a restaurant, regardless of whether or not the restaurant accepts tips, if the waiter is a dick to you, you should have no problem talking to a manager. But if the behavior is courteous, as it ubiquitously is in that profession, what is left as criteria to tip on? How often they refill your drinks or come by to make sure you are okay. But depending on how well staffed the restaurant is, the wait staff might be overrun because of shitty scheduling. So then it's not the waiter's fault at all, it's the restaurant's. So at that point is tipping that individual something you should really bother with when the whole place might be disorganized? After all, you undoubtedly got your food and drinks. Service in that profession is incidental, low skill, and has very very little impact on the main product: food.
But for true service jobs where the results are highly dependent on the person actually servicing you, then and only then, do I see it to be worth tipping. Like maybe a masseuse.

In spain is similar, on turist-orientented bussinsses that absolutely doesn't matter. Because they're one-time customers however they're treated. So employers just hire the cheaper people they can found, make them overwork, and the employee doesn't care much because it's just a temporary job (3-4 months) and the employer can't dispense of a person because they're too busy. It makes no sense to say "well the good outweighs the bad." If you provide consistent service, you should be consistently paid. If you underperforming you should be let go.
