For me personally, it's scratches some part of my brain that nothing else really does. It's the idea of punishing something for being stupid/annoying/ungrateful. WHAT IS THIS SHIT? - The concept of fluffies started as a way to piss off fans of MLP but has long since evolved to become it's own thing.
WHY DO YOU GUYS LIKE THIS STUFF? - It's true that only half of 1% of the fandom get a sexual thrill from seeing these things being abused. For the rest of us, they're a stand-in for the abhorrent human behavior we'd like to see punished in real life. It's cathartic. It's like watching dumb teenagers in horror movies do dumb things which result in them getting killed. Fluffies act as a fictional punching bag to relieve our real world stress. NO ACTUAL ANIMALS ARE BEING HARMED HERE!!
WHAT ARE FLUFFIES? - They are a genetically engineered bio toy created by a fictional mega-corporation called Hasbio. Think of them like a Sony Aibo except made from flesh and bone. Early prototypes were released from the lab into the wild by eco terrorists from PETA where; due to their large litters and rapid reproductive rate, they quickly established themselves as pests and vermin. They destroyed crops and caused all kinds of other problems.
WHAT’S UP WITH ALL OF THE ABUSE AND KILLING THEM? - It depends on the headcanon but most agree that Hasbio had their product legally declared a “non-animal”. Since fluffies DON’T enjoy ANY animal rights or protections, it’s perfectly fine to do anything you want to them. Fluffies exist in a “science gone wrong” style world where they’re the exception to the rules and human society just accepts this as normal. For us in our reality, calling them bio toys instead of animals is a way to get around the animal abuse argument.
WHY DO THEY SHIT AND PISS SO MUCH? - It’s generally accepted that fluffies have an inefficient digestive system. They have a very large and muscular colon but their sphincter is weak. They are easily frightened or surprised which often results in loss of bladder and bowel control as an involuntary defense mechanism. Fluffies have a sensitive nose and will either accept or reject things based on smell. Because of this, fluffies often use their shit and piss as a weapon against humans or other fluffies.
WHY DO THEY KILL OR REJECT BROWN FOALS? - There is no set canon as to why brown foals are so hated. Some say that mares were programmed to “self sort” their litters based on customer preferences gathered from surveys and focus groups while others say it’s because the mares see brown foals as literally a baby made of shit.
WHY ARE THEY SO FRAGILE? - Fluffies were originally intended to live only indoors. They are weak and fragile so as not to cause any lawsuit worthy injury in the event they did turn on their owners.
WHY DO THEY TALK LIKE THAT? - Fluffspeak sounds like how a human toddler would talk. It’s meant to make fluffies appear cute and therefore loveable. Their vocabulary is genetically pre-programmed with English being the first and only language available at the time of the lab breach. The noises foals make are similar to those of rodents. Search for “richardson’s ground squirrel sound” on YouTube.
WHY DO PEOPLE CUT THEIR LEGS OFF? - Much like with real world slavery, amputations originally served as a punishment to limit the fluffy’s mobility and correct behavioral problems. Owners soon discovered that quad amputation or “pillowing” made their fluffy very docile because they were now totally dependent on the owner for EVERYTHING. The unseen side effect of pillowing is that the fluffy will often lose the will to live and wish for death when the owner isn’t around.

There's different "versions" of them.
Beta - The unfinished ones released by PETA. Dumb, violent, fuck like rabbits, generally "not sorted out yet".
v.1.0 - The official public release version. These are the "good" ones people keep as pets. Initially sold for high prices, "Mane 6" versions commanded five figures from collectors.
v.1.5 - An update so mares would recognize alicorns instead of killing them as birth defects.
Fall of Cleveland - An event which killed off most of the feral Beta's but at the same time destroyed the market value of fluffies.
