It's not a hard boss fight honestly.
Take advantage of the fact that you can stagger him and backstab him (also parry, if you're good at parrying).
Overall you should just learn the 2nd phase moveset, roll and attack, don't be too greedy (especially if you're using a slow weapon) or you'll get punished hard.

I see, at first it might seem like a hard boss fight, but really, it's not.
As you're using a pretty high consuming stamina weapon (and it's a really slow weapon aswell) try to keep an eye on your stamina so that you don't run out of it while attacking.
Patience is the key, you'll eventually make it.
Or you can summon someone to help you (unless your game is yarred)
