I wouldn't spend any substantial amount of money on your first car, you'll regret it.
It's not a bad car, but you have better (read: cheaper) options, like the nissan S-chassis, Honda s2000, Mx-5 Miata or even the gen 5-6-7 Celicas or a Celica GT4.
The reason I say this is that while the 86/brz is pretty good as far as fun cars go, you have better options in terms of resale, mod-ability and fun per dollar.

Im an EMT so I decided to get the plates. They've gotten me out of tickets before
I thought so too. It still will runs but I can tell it has bad piston rings. No telling what the cylinder walls look like at this point.
The K is definitely an interesting swap, the RaceLab MR2 is my inspiration. I don't want 900hp though. Maybe 450-500.
Hux Racing makes an adapter "kit to fit a K20/24 onto the MR2 Turbo E153 transmission, so it'll be a relatively easy swap.
Reliability is an issue for jags of that vintage, I know theres LS kits which should solve most of the issues.
Just look for a well serviced/taken care one, I did it with my jag and its more reliable then some german cars that my family has.
Snap oversteer is a much smaller issue than people make it out to be, but it does happen.
I'll definitely be getting a cage and harnesses put in the car though. It's small enough that I'm a bit scared of it at higher speeds.

Honda S2000 is not really for beginners at all and I wouldn't recommend it. With no traction cantrol and RWD it could end with you in a tree and you don't really want to crash in honda.
