Well most samurai were actually mounted archers.
they rarely used their swords in actual combat. the majority of the fighting in japan was done by footmen with bamboo spears.
the difference in size and strength and the difference in gear are both on the side of the knight. a katana can not block a strike from a European long sword with out taking severe damage. I am assuming that they don't know anything about each others styles and are just suddenly fighting.
if it's a knight in full plate he's going to savage the samurai like a child. If its a knight in gambason and mail he will still basically be impervious to any slashing cut from a katana which is what they are made for. Also knights often carried shields and used them effectively in melee.
as cool as samurai are they were no match for knights.

well during the real wars they would make swords out of anything. but the really nice swords were made of a meh soft steel with a strip of good hard steel wedged into it so they could put a good edge on it. The way they had to make steel wasn't really controlled so swords were never of the same quality. It's kind of stupid whenever you see katanas being described they always describe the high end ones that would have been extremely expensive. japan was shit and almost none of the people in the wars had swords. they used farming equipment and sharpened bamboo spears. This is why the ninjas had such unique weapons. the kunai throwing knife things were just sharpened gardening tools.
it was documented that ninjas would kill a samurai and take his better quality sword over their shit ninjato which was often made of extremely poor metal.
