I'm Nicaraguan and I've had this cheese that my parents got me and they've gotten it to me for a few years now but I haven't bothered to ask.
For reference it's a medium-hard cheese that can break into little harder chunks, slightly porous. It's strange, somewhere between moist and dry. The body of the cheese is pure white, but the extremely thin rind of it is more solid (lacks the pores) and is more beige unlike the rest of it. No particular smell, very faint, and the taste is somewhat bitter.
I'll get a picture if anything but I'd rather not.

Netflix has a show called "Chef's Table" where each episode is about a different chef. One guy is Italian and described it as something like the perfect combination of sweet, salty and umami (and maybe something else). I have to agree, that shit rocks.
Other choices would be 2+years gouda, gorgonzola and good feta.
Had a roommate years ago who had some part-time job at a Demeter farm. It's basically a super organic spiritual hippie movement of growing food. On sundays they always had "group breakfast" and he'd bring leftover cheese and yoghurt. These people may be nuts but damn they made some great food and some of their cheese was the best I ever had.

It's hard to say for me.
I'm Dutch so my go-to for-everything cheese would be gouda or what have you.
But I also love the worst of the terrible french cheeses. Natural love for camambert and brie of course, but I'm more partial to the heavier stinky shit like Maroille.
Blue cheeses I love mainly in tandem with other ingredients.
Aged gouda is also very awesome if you have access to mayonnaise or butter, standalone it's dry af but still well to do.
So yeah. The best cheese is the cheese closest to me at any given time.
