I like FO3's narrative a bit more. Felt more faithful to it's predecessors and more importantly was more personal.
Mechanic-wise though, NV definitely had the edge.

I hate to agree but I do. I think as an experience I enjoyed 3 more but New Vegas certainly was much more polished.
It had mostly to do with story but for whatever reason I see find myself playing more of New Vegas. Maybe because it was better from a technical aspect and I like the idea of being out for vengeance.

Not starting in a vault I will give you. But the previous games felt more like a deserted, empty wasteland and the capital wasteland always felt too urban to me. Too cluttered. There were too few long, lonely stretches of road or empty fields, things like that.
As to the story, well, wanting to turn on the purifier was fine. Then suddenly the enclave wants to turn it on too! And we don't want them to turn it on why? Because they'd charge the residents money for the water? The water flowing freely out of massive pipes that anyone could walk up to with a bucket and cart off?
Or maybe the fact that your robotic companions, your literally-immune-to-radiation super mutant, your literal "would gladly die for you" slave, or your ghoul-for-hire all of whom could have turned on the pump for you refused to because... why again? (Yes, that was retconned in the DLC, but it was still fucking stupid)
Granted, not wanting to infect the water with the virus would be a reason to keep the enclave away, except we already know that Autumn didn't want to do that in the first place and that was just Eden trying to poison 95% of the world.
The whole way through it was just constantly making me sit back and wonder what the fuck was the point, and as trite as the saying is, it completely ruins the immersion.

I played a bit of NV, but since I only had access to a non-modded copy it was way too bugged for me to enjoy.
Once I was falling through every surface possible in one of the service tunnels (a shortcut between the overworld and the area 51 place I think), rendering it impossible to be fully sure of my exploring the tunnel. The was a side-door in the middle of the tunnel that I simply just could not reach, there might have been an entire dungeons worth of material to explore and I had no idea. Exploration is very important to me, my experience was ruined at that point.
