On the beginning, Vision gives the idea, but Cap Pussymerica goes all the way whith his "we don't trade lives" and ended fucking half of the universe. Good maths, Cap. Still, they choose the long path to save both Vision and the Universe (ends bad) because A) A Stone cannot be destroyed easily, there's only few things in the universe capable to do the job, mostly the others stones. Scarlet Witch can do the job because her powers comes from the very same stone and the work of Hydra. And B) Because is a awesome weapon you cannot discard unless you don't have any other option, same goes for the Time Stone under Strange's control
Second, Thanos never goes full power against any of his foes. He is not a killer, he is a pragmatic guy that comes with a very logical conclusion: A finite universe, with finite resources and energy, versus a expanding and potentially infinite number of beings consuming these infinite sources of sustenance. He don't use all his own power, not the stones in almost any stances, but, in the end, the Gauntlet and himself where unable to handle all the combined power of the stones. Probably, even a being like Thanos is unable to handle such level of power, and he only can access it very limited, but, anyway, he fucked a moon a created a meteor shower only in the point when he noticed he needed to do it.
Strange states "this is the only way to win", that negated any form to beat Thanos and, in the end, probably everything happens as Strange plan. Probably, all this is related to the Soul World and all the people erased are, indeed, stored in the soul stones, with Gamora as a medium between the owner of the stone and these souls
