I got Bloodborne recently, only played for a little, an rage quit after a while so I am somewhat lurking this casue they are similar from what I hear.
Can't tell if good game, or just super hard and the challenge is there that most games lack but is really shit game.

There are two ways to protect yourself.
Dodgeroll if you are really light on your feet (determined by carry weight vs equiped items weight)

Block (costs stam and can be broken by strong attacks)
Learn to lock onto targets
Learn when to unlock large or cumberson enemies and free cam fight.
LEARN TO SPOT THE TELLTALES OF AN AMBUSH OR TRAP
Mimics have a chain who's end points at the player.

Souls is not hard, it's just repetitive and meticulous.
Sometimes even if you play perfectly the boss will still kill you (Ornstein and Smough).
Don't forget to backtrack, it's easier if you find the shortcuts.

Otherwise settle into a comfy AF atmosphere and prepare to die casul

If you find one area way too hard, consider if you have an alternate one also available to you.
Don't be afraid to spend or lose your souls.
Grinding for levels helps a little but not a lot.
Experiment with different weapons and armour, and the upgrade system.
All classes and starting gifts are perfectly viable, but the deprived class is really just there for extra challenge.

In my experience there's a lot more unfair bullshit in Bloodborne compared to the Souls games. They're both very difficult but in BB I would often get hit when it looked like I was out of range of an attack. I would even look at replays with the playstation share thing and the enemy's weapon wouldn't even visually hit me but I would get hit anyway. Very infuriating.
And yes I know Bloodborne's combat style is designed so that you get hit more, making use of the rally system

That being said, it's vastly different.
Bloodborne is it's own game, combat mechanically, with the same combat mechanics at it's core.
You must zig-zag in Bloodborn, you have to tumble in Dark Souls.
You step back from enemies in BB, you dodge around enemies in DS.

Variation of abilities matters fairly little in PvE.
It's in PvP you've got to consider that kind of stuff.
I got through all DS games with Uchigatana+Grasscrest shield and R1 spam.
High Dex/Stamina to just dodge in circles around the enemy.
As long as you have stam left for a dodge roll away from a set of abilities, you're grand.
I have a total of 400 hours across DS1-3 and Bloodborne. So my opinion is far from fact compared to the 1k+ crowd.

Parry/riposte is completely irrelevant to PvE.
It makes content easier, sure.
I got through all three DS games before I learned to properly time a parry.
I'm genuinely not good at that aspect, but I can time my dodges perfectly and have many 1st try boss kills where I took 0 damage.
I killed Iron Golem in DS 1 with a Katana. It does 64 damage per hit.
It has 2,88k HP.
The games are strange, what works for some, doesn't work for others.

Start pyro, dump skills initally to get str to 16, and dex to 12 (or whatever long bow needs)
then straighty intu endurance and vitality (mostly endurance).
On the bridge after the taurust demon, shoot the dragon's tail w/ large arrows ~30 times to get a nice sword that will carry you for half the game.
Get a shield w/ 100% physical. The ones the dudes the in the undead burb should be enough for that. Use that until you find the Purple Dragon Crest shield or (luck out) and get a black knight shield)
Use stock armor until you get to the darkroot basin, and find the elite knight armor, that will be good for the rest of game.
Kill lautrec for ring of favor, use that and never take off. Other slot used for swapping whatever ring used at the time.
Once vit and end are at good levels, dump into str or dex (not both) and find a good sword that scaled with them. I prefer dex + uchigatana (get from killing merchant in undear burg.
There you go, now avoid guides.
