actually quite small, in norway theres a quota that only allows 7,5k eggs a day. in demark for example there are hen houses with 30k+, if not alot more.
chicken and hens are quite easy, all you need is to have a regular feeding and easy access to water, stable temperature +-20c and a stable day/night cycle, if not (depending on where you live) you might risk having hens that only lay eggs daily during a certain period of the year. which is actually the healthiest for the hens, those that lay eggs ever day for a year loose almost all of their feathers on their body(except wings) because of how much energy is used making eggs (we switch them out each 1,3 years with new ones).
if youre gonna start with your own hens then it depends on much land youre gonna use on them, 10-20 shouldnt be a problem, 100 if you got space to keep them comfortable and enough money/resources to feed them.
if you only want to spend 10min on them each day then 30-50 (depending on your setup) is probably a good number.
