sushi is a cultural icon, and actually fairly expensive in japan. people there actually prefer poultry over fish, typically chicken or pork. i would actually know because i did a survey among japanese international students while in china.

Usually, but not always. I mean the reality TV show is both scripted and heavily edited. His advice is sometimes but rarely wrong, but it is oven boiled down for television into some straight forward problem solution format rather than legitimate advice.
In the dining scene he almost always records a whole plethora of reactions to the food. He will say good things AND bad things when he isn't sure and overplays both side to give himself more to work with in the editing process so they can put together a better complete narrative.
In this particular example if you watch it closely he says almost nothing definitive when it focuses on his lips. This is to give him plenty of room to edit around later.
His actual reasoning why the pizza is too greasy and heavy is more complicated than simply "because it's not good". Restaurants are businesses, you have to maximize profit margins and repeat customers. People really might love a pizza like that, but there are other issues related to that.
1 They will be so full they won't return very soon.
2. It's not exactly a healthy lunch option it's a once in a while sort of thing.
3. Also it costs a lot in sheer ingredients to make a pizza that big.
a. Restaurants lose more money spending that much on ingredients.
b. Any additional cost put towards the cost of the pizza itself is suffered by customers who don't want to spend extra money on a pizza they can't eat.
That all said even if this was all true, it doesn't necessarily make it the primary issue. There could be any number of other problems he doesn't discuss here for the purposes of entertaining television. And that's assuming his primary interest is in actually helping the restaurants at all.
Basically Gordon Ramsay knows what he is talking about as well as anyone could. He makes mistakes from time to time, but he's pretty on the money usually. It's just that what you see in television is basically just assembled for television.
