But ya, it's an odd stove. Takes like 2 minutes to light and I can hear it popping on and off the whole time. So I put it at 425 instead of the requested 400 but seems I might need an oven thermometer.

that is pretty weird, I think an over thermometer would be a good idea. I know just about every over my parents have had runs cooler than what you set it for, maybe yours runs hot.
My family used to cook hot dogs for 2min in the microwave and always got confused why they blew up 100% of the time.
I'm like, "well if you read the package it says to cook them in the bun wrapped in a paper towel.... and for only 30 seconds."
