TNG is great once it gets going. Far and away better than TOS. DS9 first season is a bit iffy, but it gets decent, even if it doesn't feel like trek due to being mostly on a space station.
VOY has more of the exploration theme and introduces some cool races, as well as makes others more "prominent" enemies. Some of the characters lack growth or substance though... still, I loved VOY.
Hopefully you watched ENT first. It sets the stage for things. It was good for the short run, but it had its flaws, including pop intro music...

DS9: More complex, more restricted in a place, but I love this. Takes a little time to warm it ut, the nigger captain is awesome, I love him! Worfs comes later in. O'Brian is also there. Some recycling of stories, but in total I really like it.
VOY: 80 years trip makes it's an interesting story, a lot of cool things, in a way better scripted than TNG. Stories could be more complex or as wild as TOS.
TNG: A little dry, takes some time to warm up, s02 is great, looking at s03 right now, great stories, true sci-fi with brain.
TOS: My favorite! A little simplistic, and maybe too cheesy, but it's impossible to be disappointed, wild classic sci-fi stories bound in a wild western style, it's usually charchter drived.
I recommend the nit-picking books from Phil Farrand, it's fun to read/see errors, many of these are very subtle.

I really like Benjamin Sisko, it's a more aggressive combatic captain, it's more on what the millitary likes, a offensive captain who develops and elvolve in a hostile enviroment. DS9 is awesome, I needed some time first to overcome it's issues.
I forgot ENT: Disliked strongly the title melody first, then I loved it later. Great stories, but could be more intelligent or more sci-fi,peoples are not morons.
s03 has a long plot, I really liked it.
I see that sci-fi series do suffer under the requirment of 24 episodes per season, it takes time to write, build and film, so the TNG are very impressive.
