I always go medium. Mostly because I like medium rare and every steak chef underfucking cooks it.
I cook my meat from frozen, makes it a perfect rare everytime.
At first I was like 'ehhh' but it keeps all the juices locked in, and I've read several articles by chefs who swear by it.
Cooking from frozen only adds a couple minutes to the cook time, and the end product is like 3 times juicier.
As you cook the outside instantly, the inside is still frozen. By the time the outside finishes cooking, the inside has reached a warm temp but isn't cooking.
But the ice seals juices in until the last minute, and you end up with a dripping wet juicy steak.
The trick is to vacuum seal the steak when you freeze it. If you just toss it into a bag itll leak all its juices out as it freezes, fucking it up.
