Because those latter disorders you mentioned are extremely maladaptive and inherently damaging to those who suffer from them. That's not the case with trans people, as many are able to live normal, healthy lives post transition.
For something to be considered a mental disorder, it must cause the sufferer severe impairment in their life. Gender dysphoria does that - which is why THAT is considered the mental disorder, with the best treatment being transitioning, which alleviates it.
