They all play pretty much the same in the grand scheme of things. Passives and greater powers have always been negligible. If you want the boost to skills for a certain class, there's that. It really doesn't matter though. Pick your favorite instead of being an elitist. You get more out of RPGs if you actually role play.

It surprised me the first time I fought him.
In skyrim if I'm a mage I usually go with high elf. That 50 extra magicka is useful every single fight. If shit hits the fan I can use my once a day power to rapidly regenerate magicka and throw tons of stuff down range. With mages I've noticed I really only die when I run out of magicka.
Warrior or thief can be anyone really. With orcs it's notable that they can activate their once a day ability to do 2x damage with a bow. Combine that with sneak and you can do legendary more easily.

Only more difficult fights for me were Helseth (because of his near immortal ring...and room full of gods) and Vivec. Helseth was not too bad because I was so OP by that point, but Vivec on my first playthrough was rough. Because I didn't yet know how to exploit.
Now it's hard to find a challenge without a bunch of mods and purposefully gimping my stats and gear. And playthrough.

Helseth and Vivec were both "because I can" kills. Only once I played Morrowind intending to complete the main quest with the second option, having killed Vivec, but Helseth was a "holy shit I was not expecting this".
For a game that almost always gets too easy after a certain point, Tribunal and Blood Bloodmoon really did give some real challenges.
With difficulty mods, the werewolves in Bloodmoon made me cry

My current playthrough of Morrowind I'm keeping my stats low. Actually using the console to keep them all around the 50 level just to make it hard.
Time before that I just walked out of the census office and instantly changed all my stats to 250+. Being a god kills the game. If the strength is too high it breaks weapons easily.
Nords or Bretons are pretty good. Nords are very solid warriors and are useful because of the 50% frost res. Bretons make for badass mages and spellswords.

High elves are my favorite race in skyrim for mages. The 50 magicka early on is great and is useful every fight. Their once a day power is a lot of fun and useful as well.
First point put into destruction. Overall it's kind of nice to have a spell in each school of magic whether you have points in it or not.
Dual cast illusion is very powerful.
The stagger perk from destruction is invaluable.
Silent cast in illusion is fun to help set up fights.
Atronachs > undead. Easier to cast and generally more powerful.
Bound bow is godly. You have to have high level smithing to surpass it.

Dunmer, no drawbacks to being a vampire, or Orcs for dealing double damage and only taking half. I always liked High Elves for like a battlemage/mage setup, possibly even getting stealth casting in.
