It was revolutionary when it was released. Nothing had ever been done like it before. That's why people liked it so much. And you can't deny they are fun, interesting games with a story that admittedly isn't very deep or hard to follow but it makes for a good game.

If you mean the series. It's pretty good imo. Lots of fun gameplay with choices that feel like they matter and sometimes they actually do. Characters are great and story is usually quite interesting and keeps me hooked during the game. Simply the world it's set in, with the lore behind it too, is very well made and thought out so it's really fun to get into.
However 3 ended a bit lackluster and ended harshly and abruptly if that's what your referring to.

I was the same as you. About 3 months after it came out a friend lent me it, I tried playing it and hated it. It didn't flow well, it was boring, just didn't seem like a fun game.
Then about a year later or something, someone on a podcast talked about it, and I decided I would buy it myself, sit down and actaully play it. I got immersed, didn't try to find flaws in it since everyone hyped it, I just tried to play it.
And it's fantastic.
If you get the chance, just sit there and play it. But try to be unbiased. Don't go into to trying to prove or disprove the hype. Just play it like a game you bought off a shelf, and it'll change your mind.

I enjoyed the exploration, the fact that I can go anywhere right off the bat is awesome. There's so much everywhere you look that the game truly rewards the player for exploration, and the map design is some of the best I've seen in games, in the sense that progression feels natural but not linear, and it somehow ends up looping around to make shortcuts between areas while not feeling like a small world. I feel like I've explored all of the map but my friends tell me I'm seen till less then half way through. It's crazy

The problem with this is its dated to all fuck. It was great when it came out, but its like Goldeneye or Ocarina of Time/Majoras mask, people are going to jerk off to it because its nostalgia. I played it for the first time last year and I can say that its just not that great when every game now has the same physics engine that they invented, but when it came out the engine was ridiculously before its time. The third will never live up to the hype that has been made for it thus it will never be released.

You can play creative and build huge structures you could only dream of, or build a little house you always liked the idea of.
You can play survival and brave the harsh (for some) nights to build a better tomorrow and make a house and sustainable place for yourself.
Once you've built something cool the satisfaction of going through the hard work to get it is awesome. Scientifically proven
Furthermore, you can go multiplayer to play with random people, join a community online and build with them, fight them, create an entire town with other people.
You can go on with your friends to do the same, build a huge mansion to house your every needs or make a town that all of you contributed to in fair part that you can look at and remember the times.
Once you've made something, you can show other people irl or in game and that is just a nice thing to do.
Then there's mods. Which can basically do anything you want. At all.
Who doesn't it appeal to?

Played and finished mgsv and fallout 4, still go back and play them quite often. Especially with fallout dlc now. Just bought witcher 3 on sale. Will play it to death too. One thing you seem to be missing though is that these games often aren't designed with finishing in mind.
Fallout has a story cus it has to, the actual game is in the world and exploration. You never finish it.
Mgsv is in the gameplay and huge variety of options during it. This one was designed around story but no one really gives a shit about it.
The witcher story is supposed to be really good, but the exploration and gameplay stand out above it.

Fallout 4 came on the heels of New Vegas (by Obsidian, not Bethesda) which made Bethesda's Fallout 4 look like shit. New Vegas, bugs aside, did pretty much everything better than Bethesda, especially the writing and characters.
Fallout 4's story ... you knew the ending about halfway through the intro, when they took your kid and time-warped you. And not only that, but all the endings are pretty much identical. The actual writing is 99% uncreative and predictable. That 1% is Nick Valentine - One of the fight beacons of light in that shitpile. Don't get me started on the stop-and-go voice acting since they couldn't be dicked to edit scenes together correctly. Like the first entrance to Vault 85 where the Overseer on the intercom pauses for like 8 fucking seconds.
Fallout 4 is a great sandbox. That's it. It is framework to be modded. But if you try to gauge it as a standalone game with no mods, it falls on it's face again and again because it's simply not a good game.

generally arcade type games have short levels that progress in difficulty, easy intuitive controls and a huge emphasis on gameplay over story. Witcher doesnt meet any of those and neither does dark souls now i think about it.

Probably the apex of Jim Henson's puppet and practical effects work. Hella nostalgia and very creative. This movie does as much to take you to a fantasy world as the Neverending Story, but more frightening.

This movie channel doesn't play everything under the sun. You won't have to sit through pablum like Avengers 2 or Batman movies. There are no cartoons, no musicals, no music videos, no TV shows… just movies. Specifically, It's mostly horror movies. Tons of stuff you have never heard of or seen. There are some sci-fi movies, 80s movies, cult movies, and just bizarre off the wall crazy shit like you have never seen, all mixed in to the horror movies. Over 600 movies that play randomly. None of that polling/voteskip shit, that shit doesn't work - because democracy doesn't work. No safe spaces here either. You can make rape jokes and insult minorities until you run out of racially charged things to say if you want. The admins only police things that actually matter. Filmclub isn't here to have broad appeal or as many viewers as possible. It's here as an alternative to all the tired repetitive BS you get from the average stream. 24/7/365 movies most other streams won't play. Even classic XXX. Check it out.

The game is finished when you're workshop is full of all the crafting supplies, weapons, and ammo you'd need. You have enough perks to be unstoppable at level 30. The bobbleheads and mags are icing on the cake. Even on Survival, getting overpowered is damn near unavoidable just by exploring for a day or two.
The last game I played, I got 4 or 5 companions, Overseer's Guardian, and 15 settlements up and going .... and the game was done. My stockpiles were flooded. I was level mid-20's mostly from settlement building. There was no longer any challenge. After that, it is just repetitive dungeon crawl and mowing down one cell after another. So fucking tedious. That game was waaaaay too easy. I call that finished.
I just hope roberts (the creator of star citizen) actually delivers something instead of buying mansions with crowdfunding money for his trophy wife.
