Death Note doesn't belong in that list. It's a childish power fantasy dressed up as an art piece. It only ever gained traction because it came out in a desert season where fucking Once Piece was the only half-decent (and I use that loosely) shonen series out there.
I'm not saying you're wrong to like it, but it doesn't belong with those other two. Bebop will be remembered in 30 more years, and FMA for at least another 10. Death Note barely gets mentioned any more except by casuals who haven't watched anime in 5-10 years.

Mainly the info dumps every couple of episodes really annoyed me and the time jumps felt jarring as hell, just as the story as getting to it's most interesting it jumped ahead. I enjoyed a lot of it but the time jumps took me out of it.
