Canadien is a term that designated french settlers that came during the 1600's. It only started to designate people from the whole country in the XIX century. Before that, the non-french speaking simply designated themselves as british or Scotts. The Montreal Canadians were, when it was founded, a predominantly french speaking hockey club that often had matches against other english speaking clubs in Montreal. It's much latter it became the town's official team. But it kept it's name referring to the first french canadian players that made the team.
