I've lived in a "well-done family" all my life. I vaguely remember being told something about having to cook it well done to make sure you kill all the bacteria.
But I recently came across images like pic related, and I've started wondering.
Am I missing out on something? Have I eaten "ruined" meat all my life?

Yeah, pretty much. I mean, you're fucking up the texture of the meat and it just doesn't taste as savory by the time you get to medium-well. You're cooking away the fat and the fat gives it flavor. Plus, you're making it more cancerogenic.

While i wouldn't trust every restaraunt in every foreign country, steak is different from typical ground meat. Ground meat needs to be cooked through because there are many nooks and crannies for it to hide. Steaks however only have the outsides which are exposed to bacteria. (Unless its bad meat) so cooking the outside well is generally enough to make it safe.

The inside of a steak is completely sterile. You could eat the inside part completely raw. It's only the outside that's exposed to bacteria.
Pork and chicken are different, and must be completely well done. Underdone pork can give you tapeworms, and chicken is shipped in liquid that saturates it with bacteria.

Yes anon you have been missing out. Well done steaks lose a lot of their flavor because the marbling (fat) in between the meat has been rendered out.
the whole point of cooking a steak past rare is because it has a lot of marbling in between the meat and thus would be chewy if it were to raw so you would cook it closer to medium to render out SOME of the fat. As for the bacteria thing no cooking a steak does not kill any bacteria that can harm you. Eating steak raw is completely safe unless the meat is rancid and if it is rancid no amount of cooking can save you from food poisoning.
The meats you have to cook to well done are
Ground beef (you can eat ground beef medium if it has a low fat content or no fat content)

I have accidentally left my steak on way too long and got medium a couple times. Absolutely ruined.
The trick is to throw a thick steak on a really fucking hot grill and douse it with a mix of oil and whiskey. This will sear the everyloving fuck out of the outside and leave nice grill lines but leave the inside red and bloody, just as god intended.
it is a mattert of taste - also digestion. uncooked is hard to digest. we do not have the enzymes to break it down, so we cannot get best nutrition from it - if you like the taste of blood, go for it, but really, eating raw meat does not make you manly, or indeed healthy. humans have evolved to eat it cooked. which is tastier - not just iron from raw blood. (For a real taste treat try black pudding, cooked of course)
What cuts of meat does your family usually get? Ribeye and T bone steaks can still taste good well done. Never cook a sirloin steak well done. It is fucking ruined. Sirloin is too lean so it drys out quickly when cooked well done.
I don't think you understand how hot I grill my steak. The oil and whiskey burst in to flames on the steak. And the change in flavour is the reason for the whiskey. Just like how I put a shitload of water-soaked woodchips on the grill for at least 10 minutes before cooking.
I've never had a really good t-bone but I've never spent a lot on a good cut of it. When it comes to steak you get what you pay for most of the time. An expensive cut, cooked properly, is just the best, most satisfying meal you can have in my opinion. (Especially dry-aged steak) If you get a cheap steak then it really doesn't matter how you cook it, you're just eating it for the sake of eating.

i really like we'll done steak tbh. The way my dad cooks it. It's never too tough or chewy and has a lot of flavour. I've had a medium rare a few times and each time is just tasted of nothing. Dunno if it's because bad cooks, or spending £20 on a steak in a 5 star restaurant in a bad idea. But let's just say is put me off for years. That and the colour makes me feel nauseous because i associate pink/red with raw like with other meats.

I eat my steak damn near raw. Just sear the sides for a few minutes and get the juices flowing. Once the core gets nice and hot it's food time. Still bleeding isn't going to hurt you. And I eat beef like 5 times a week at the very minimum. Beef is the perfect meat.
for whatever reason, inside beef meat is a somewhat sterile environment, and anyone who knows the finer points of "clean rooms" knows that hyperefficient bacteria exist even where sterilization methods are most stringent, so "sterile" having an absolutist definition is incredibly unhelpful from a practical standpoint
aged beef is a very common thing and its likely that microorganisms embedded in the meat speed this process but for whatever reason the compounds they create are initially nontoxic and it's easy to sniff out "turned meat"
if you leave a steak long enough it'll dry out or develop a gross film, salt provides a good safe chemical way to promote drying, flavor and enough sterility to guarantee safe edibility.

Even Pork is safe to eat rare in the west because of the dietary restrictions on farmed pigs. Trichinella is extremely rare now.
I always order medium rare when at a restaurant. Even when the steak is taken of the grill the meat is still cooking inside itself. By the time the steak is in front of me it usually reaches a nice medium level. But then again you have to factor in the chef and hope they know how to properly diagnose a steak. If you haven't worked in a few different restaurants, then you aren't aware of some of the "special" people that prepare your food. My last job I got to work with a Michelin star chef and got to taste some amazing food. Albeit his skill was only surpassed by his sociopathic tendencies and alcoholism. Great times.

Ive been cooking my entire life. Its up to your preferance if you like a mouth full of blood or a mouthfull of cooked meat, I prefer well done, I always make it taste great, it does not need to taste like blood.
I live in Brazil and due to massive production of meat, some are not well cleaned and are sent to stores full of bacteria. It is a custom down here to do it ''well-done'' or you're risking getting tapeworms. On the other hand, things that can happen in both 3rd and 1st world countries is the fact that some people buy meat straight from the butcher, and it can often be full of shit too, since its responsibility of the owner to clean everything.

I'm a professional cook. I think some people are just incapable of having bloody food at a genetic level. I typically med rare or medium, but I've had to throw NY Steak in the fryer before and the dude ate the whole thing. It was weird, but I don't begrudge people for what they like.

Not op, but this is how I cook my steaks. Give them a good sear on a grill or cast iron pan. Put em in a foil pouch in a 400degree oven for 30-40 mins. When it comes out its well done, and all the fat is gone, the fat is now a puddle at the bottom of the pouch that becomes my steak sauce. Ive had rare/medium etc. Its all good, but well done is my favorite.
u are all dumb. The only bacteria that gets on beef, is e.coli if they knick the intestines while butchering. Raw beef has no natural bacteria. That's why they can age beef like the french and eat it raw. Certain fish like Salmon and Tuna can also be eaten raw. Pork and chicken need to be well and truly done.
