Indian mechanics are also pretty amazing, there are quite a few videos where they totally tear down, hone and put new rings on, and put an entire fully dressed long block back in under 45 minutes.
Granted they will have 6 people working on that, and each one knows exactly their role every time.

That way you can have a ton of fun on a little bike without spending a bunch of money.
