I wouldn't participate one way or the other cause on one hand i think repurposing old women for food is a great idea, but on the other i know how dirty women are and i wouldn't be able to stomach them.

I don't think it should be based on age. Their IQ and what the can contribute to society should determine if they are kept for breeding or sent to the slaughter house. As for the minimum age to start the rating process, we'd have to decide that. Ive read that too old, the meat becomes stringy and tough, so the younger the meat the tastier. I'd say between 14-24 we can decide if someone is worth keeping around or be a better meal.

While I'm no butcher or anything, I'll give it a shot:
First, sedate her. After killing her, first shampoo her hair, then clean her skin and soak her head with plenty of peroxide. Rinse with hot water.
Hang her upside down above a large bucket and slit her throat and let all the blood flow out for a bit, then just take her head off and let the rest drip out.
Cut the skin open, getting below the fat, from the base of the neck to above the groin area. This is the cool part. Below the skin there is another layer that encapsulates the intestines and stomach, cut this open and then try to make just two clean cuts to take out the whole digestive system, cutting the top of the esophagus and the bottom of the intestines. I think you could clean the intestines and eat, but these are the "dirtiest" parts and MUST be cooked well. The stomach is nice in a stew, but has to be boiled for two hours or so I believe.
