I think the best way to explain it to someone who hasn't really done too many physics classes is:
Imagine that there are two diving boards, both 20 metres high. One stands above a foam pit, the other over an empty pool (essentially a concrete slab/the ground). You can jump off either, which one would you pick?
Straight away you'd pick the foam pit if you aren't a whiny an hero faggot. Now, you will hit both the concrete floor and the top of the foam pit at the same speed. The foam pit will save you as it essentially allows the force of you hitting the ground to act over a far longer period of time. The concrete slab will either kill you or really injure you because the force (you) was stopped abruptly.
Same can be said for the diamond. Imagine that a standard ballistic vest is a foam pit and a diamond one is the concrete slab. The diamond one would easily be able to stop a bullet but all of that force would be distributed through you essentially instantaneously. A standard ballistic vest has a bit of "give" allowing for a longer period of time for the force acting over you.

When someone is shot while wearing a bullet proof vest, they still receive a nasty bruise from where the bullet struck the vest. It also depends upon the type of round being used. Fragmenting bullets break apart when fired, acting like buck shot or bird shot. Being struck by multiple small projectiles allows for the force of impact to be dissipated. A solid round carries all of its force.
Either way, bullet proof vests work fine as they are and don't require some autist to improve them with diamond plates.
